Baba Ghanoush

Check out this tasty recipe for baba ghanoush!

Ingredients:

  • 2 eggplants (large size preferably)
  • 2/3 c. tahini
  • 5-7 T lemon juice
  • 3 finely minced garlic cloves
  • 3 Tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Garnish: diced tomatoes, chopped chives, chopped parsley, hot paprika (Hungarian)


1. Poke the eggplant with a fork numerous times. Grill over medium high heat for 30-60 minutes, or until the eggplant is completely soft. Turn the eggplant from time to time so that it does not burn. When the eggplant is done, remove from the grill and allow to cool slightly.

2. Remove the peel and scrape the pulp. Place the pulp in a food processor and process until smooth. Add remaining ingredients and pulse until they are well incorporated.

3. To serve, smear the baba ghanoush on the bottom of a plate. Sprinkle with tomatoes, chives, parsley, and paprika. Serve with warm pita bread.
